MOM'S BANANA BREAD



I've loved all things banana flavoured my entire life. I remember as a kid when I would get sick, I got so excited when the doctor prescribed me the banana flavoured amoxicillin (I know other people who loved it too don't judge me).


I'm lucky my mom has an amazing banana bread recipe that she always makes when she has two ripe bananas left at the end of the week (that's pretty often). When I made it this time, I added a little something for my dad who loves banana and chocolate gelato together. It was a super Chunky Monkey experience.


Ingredients:

  • 2 ripe bananas - Next time I want to try adding a third banana, but slice it down the middle and just place it on top of the batter when I put it in the oven.

  • 1 cup flour

  • 1/2 cup oil

  • 1/2 tsp baking soda

  • 1 tsp baking powder

  • 1/2 cup brown sugar

  • 2 eggs

  • We usually add chocolate chips and walnuts but this time I tried adding slivered almonds and 1/2 tsp of almond extract.


Directions:

  • Preheat the oven to 350 degrees F.

  • Mix the wet ingredients in one bowl.

  • Mix the dry ingredients in a separate bowl.

  • Combine all the ingredients.

  • Spray a bread pan with Pam and pour the mixture into the pan.

  • Bake for 30 minutes.
